The Bay of Arcachon is a lagoon open to the Atlantic Ocean, where the tides constantly renew the water. This natural circulation provides the nutrients necessary for the development of phytoplankton, the main food of oysters.

There are several reasons for the quality and reputation of local oysters:

  • A unique natural environment: the shallow waters of the Bassin allow oysters to alternate between immersion and exposure to the air at each tide, which influences their texture and taste.
  • A major role in French oyster farming: the Arcachon Basin has historically been an important spat collection area (young oysters). Some of these oysters are then farmed in other French oyster-growing regions.

Andernos-les-Bains: an oyster port at the heart of your holiday

Andernos-les-Bains is one of the most pleasant places in the Basin to discover oyster farming. Its oyster port, located just a few minutes from our campsite and the famous jetty, allows you to observe the activity of the oyster producers of the Bassin d’Arcachon while enjoying a typical setting.

Gujan-Mestras: the capital of oysters

Located on the south shore of the Bassin, Gujan-Mestras is often referred to as the capital of oyster farming. The commune boasts seven oyster ports, including Port de Larros and Port de Meyran, which are home to the majority of local oyster farms.

Visitors can watch Arcachon oyster producers sorting oysters, preparing the shells and taking the boats to the oyster beds. Several huts also offer on-site tastings, often with a direct view of the oyster tables.

Our anecdote: the oysters are produced by a family of oyster farmers who have been present on the Bassin since 1879, then served directly in their waterside tasting hut.

L’Herbe: one of the Bassin’s most typical oyster villages

Located on the Cap Ferret peninsula, L’Herbe is one of the Bay of Arcachon’s most famous oyster villages. Its narrow streets lined with colorful huts, wooden pontoons and oyster beds visible at low tide make it a popular spot for visitors.

A number of producers welcome visitors to taste their Bassin d’Arcachon oysters directly from their terraces facing the water.

Our recommendation: Chez Hortense or La Cabane de l’Herbe

Good to know: the L’Herbe oyster huts are particularly appreciated for their setting: from the tasting tables, the view opens onto the Bassin with the Dune du Pilat in the background.

Le Canon: a discreet oyster-farming village full of charm

The oyster-farming village of Le Canon offers a quieter atmosphere, but is just as typical of the Bay of Arcachon. The huts are lined up facing the oyster beds, and some are still used by the oyster farmers for their daily work.

The Canon is also an ideal place to learn about the traditional organization of Arcachon’s oyster huts, used for oyster sorting, storage and sometimes tasting.

Our recommendation: Cabane Réveleau or chez Boulan

Our tip: take the time to wander through the village’s narrow streets after your tasting. In summer, they are lined with hollyhocks and offer several viewpoints over the Bassin, perfect for prolonging your stroll.
